Chicken chirga, a variation on the traditional Mogul tandoori chicken, is readied for the expected Friday night crowds in Colombo’s inner city area of Aluthkade. July 2023. Chirga is marinated in the same mix of tandoori masala spices and dahi yoghurt, but is roasted over coals instead of in an oven. Tandoori chicken may very well be the world’s oldest surviving dish; tandoori-style ovens have been found in the ruins of the Bronze Age Harappan Civilisation of India and Pakistan, dating to 3000 BC.
